My Mum’s Banana Cake

Ingredients

250gm/10oz butter
250gm/10oz white granulated sugar (caster)
375gm/13oz self raising flour
4 eggs
2 teaspoon bicarbonate soda
1/2 cup milk
1 cup ripe bananas, mashed

Method

1.Cream butter and sugar, gradually add eggs
2.Beat in mashed bananas
3.Dissolve bicarb soda in milk, stir well
4.Add flour and milk alternately until all ingredients are mixed well
5.Pour into 8x10
6.Baked at 180C/350F for approx 25-30 mins. Use a skewer to check batter is cooked
7.Transfer to a wire rack to cool
8.Coat with a sweet butter cream and serve!
